Mote con Huesillo

Take cold water. Mix in honey and sugar, cinnamon, and dried peaches. Cook it down. Add husked wheat. Chill until almost frozen, then dip it from metal bins into plastic cups.

This is mote con huesillo, and there’s a reason it’s for sale on every street corner in Santiago. It’s simply delicious.

You suck down the sweet, chilly, peachy beverage, then spoon up the peaches and wheat. Ahhh — it’s a drink and a snack in one!
